Ottawa Turkey Pot Pie
TURKEY POT PIE with Farmer's Sausages

1 tsp. olive oil 1 Farmers Sausage casing removed 1 med onion chopped 1 celery stalk chopped 6 tbsp. butter or margarine 1/3 cup flour 1 cup 2% milk 1 cup turkey or chicken broth 1 dash each: poultry seasoning, ground rosemary, thyme, salt & pepper 2 cups left over cooked veggies or 2 cups frozen mixed veggies thawed. 2 cups left over cooked turkey cubed 2 cups mashed potatoes. Cranberry sauce (optional)

1. Place a saute pan or deep skillet on high heat and add 2 tbsp. (30 mL) oil. Season pork with salt and pepper. Add pork and sear, stirring occasionally until the pork is no longer pink, about 5 to 8 minutes. Remove pork, reserve oil and wipe out the pan. Reduce heat to medium-high.

1. drizzle olive oil in heated non stick skillet
2. break up sausage & brown, remove from pan keeping drippings in pan
3. sauté onion & celery till translucent
4. melt butter in pan
5. stir in flour until well blended
6. gradually whisk in milk & broth stirring constantly till sauce boils gently & becomes smooth
7. stir in seasonings
8. return sausage to pan & add turkey & veggies, mix well
9. put in pastry shell
10. dot evenly with cranberry sauce
11. warm left over mashed potatoes in microwave & carefully cover the pie
12. bake at 400 for 30 min.
